The difference between an espresso machine and a cezve is not just in taste — it's in pace. An espresso machine brews in 25 seconds. A French press takes four minutes. The cezve asks if you have time. If not, it's the wrong moment for Turkish coffee.
Here is the ritual:
- Grind coffee — powder-fine. Finer than for espresso. The grinder must be set to the finest setting — this point is non-negotiable. Coarsely ground coffee will not produce kaymak.
- Decide on sugar — and boil it with the coffee. Turkish coffee has four levels of sweetness: sade (without sugar), az şekerli (lightly sweetened), orta (medium), şekerli (sweet). The sugar goes into the cold water with the coffee powder — boil the sugar with the coffee, never add it afterwards. Adding sugar later destroys the foam.
- Add cold water. One measuring spoon of coffee powder per Fincan (Turkish coffee cup, 60–70 ml). The Ottomana cezve holds 370 ml — enough for 3–4 cups.
- Low heat. The flame should never be wider than the base of the cezve — this is the gas flame rule that SevChern prints on an instruction label on every cezve. If the flame is turned up too high, it will burn the silver on the outside and the coffee on the inside. For those familiar with the classic method: with kum kahvesi (sand basin), the heat can be controlled even more finely — the sand bath heats evenly and allows for minimal swirling.
- Heat slowly, 2-3 frothing phases. The coffee slowly rises. Just before it boils — never let it boil — remove the cezve from the heat. Part of the foam goes into the first cup, then return to the heat, let it rise again. Two to three cycles. This creates the köpük — the dense, creamy foam that floats on top.
- Serve. With a small glass of water (to cleanse the palate) and Turkish delight on the side. The coffee settles at the bottom — the foam remains on top.
This cannot be reproduced with a Bialetti. Not because the Bialetti is inferior — but because it makes a different drink. Coffee from a cezve is its own category.

Care of the Set — To Keep Niello and Wood Beautiful for a Long Time
Niello is naturally easy to care for. It doesn't tarnish like pure silver because the niello inlay is a stable alloy — not a surface that oxidizes.
