2. Measure water and coffee. Per cup, approximately 60–70 ml of cold water directly into the coffee turka. For 1–2 Moka cups from the 200 ml set: about 2–3 teaspoons of coffee powder.

3. Add sugar directly. Turkish Moka has four levels of sweetness — sade (without sugar), az şekerli (light), orta (medium), or şekerli (sweet). Add the sugar immediately with the powder to the cold liquid, not later.

4. Stir once. Gently stir the liquid once with the set's stirring spoon — just to combine the powder and sugar. Do not stir again from this point on.

5. Heat over low heat. Gas or ceramic hob, flame never wider than the Cezve base — this rule applies especially to the silver base of the turka, which should heat evenly, not be heated pointwise. Do not boil.

6. Observe the Kaymak. Slowly, a golden-brown foam — the Kaymak — forms on the surface. As soon as it rises and is about to overflow, remove the turka from the heat.

7. Spoon foam into the cup. Carefully transfer the Kaymak into the Moka cup with the coffee spoon. This first step makes the foam creamier and more durable.

8. Second and third frothing. Briefly return the turka to the heat — a total of 2–3 frothing phases will produce the densest foam. In the Turkish coffee world, this foam is called köpük — it is the sign of a well-prepared Moka and should not be damaged when pouring. Carefully pour the turka into the cup, preserving the köpük.

9. Serve. A glass of cold water alongside, a piece of Lokum — the palate is refreshed between sips. No rushing. No refilling.

Compared to an espresso machine, this method takes three minutes longer. Compared to a French Press, it produces a denser, sweeter, more aromatic coffee. Compared to a Bialetti, it works without pressure, but with patience — and that is the difference perceptible in the mouth.
