The conical cezve silhouette — also known as Ibrik in the Arab world — is not a modern design choice. Since the 16th century, this form has been physically adapted to Turkish mocha. The wide base absorbs maximum heat and transfers it evenly to the coffee grounds. The narrow neck concentrates the foam crown — the kaymak — like a natural aromatic lid, while preventing excessive evaporation. 1. Add one heaped teaspoon of finely ground mocha per cup to the cezve.
2. Measure the sugar directly with the powder — sade means without, az şekerli little, orta medium, şekerli sweet. Adding sugar later doesn't work: it no longer forms foam.
3. Add one small mocha cup (60-70 ml) of cold water per cup.
4. Stir briefly until everything is moistened — then do not stir anymore.
5. Heat slowly over low to medium heat. Never let it boil.
6. When the foam first rises — the kaymak, the dense foam crown — quickly remove the cezve from the heat and spoon some of the foam (köpük) into the cups. This foam crown is the most valuable part and the sign of quality of any true Turkish mocha.
7. Return to the heat, wait for the second frothing.
8. Pour carefully into the cups — the foam remains on top.
9. Serve with a glass of cold water and something sweet — lokum is classic, chocolate too.

On which heat source can I use the silver cezve?
This Turkish silver coffee pot can be used on gas stoves, electric stoves, and ceramic hobs without problems — ceramic reacts a bit slower, which is even helpful for mocha. The classic sand tray (kum kahvesi) is traditional and ideal for slow, even heating. Open fire also works — that's what the long wooden handle is for. Induction does not work: 925 sterling silver is not magnetic; this is physics, not a product limitation. Not for microwave either.

Important note from SevChern regarding gas flame:
When using on a gas stove, the gas flame must never be wider than the base of the cezve. A flame that is too wide will impinge on the sides of the pot body and can unnecessarily stress the beechwood handle and the polished silver surface. Keep the flame small and concentrated under the wide base — this is not only safer but also traditionally the best way to froth a controlled mocha.
